Vegetarian Sweet Chili Recipe
2 medium yellow onions chopped 2 green peppers, finely diced 4 red bell peppers, finely diced 15 Roma (Italian) tomatoes, diced (option: 1 can of diced tomatoes) 1 can rinsed black beans 1 can rinsed kidney beans 2 tablespoons paprika 1 tbsp sweet chili powder (***not cayenne! The sweet. I made that mistake ONCE!) 1 tablespoon of cumin 1 tablespoon of oregano
Salt and pepper to taste Additional: 1 to 2 tablespoons of paprika 0.5 to 1 tbsp sweet chili powder 0.5 to 1 tablespoon of cumin 0.5 to 1 tablespoon of oregano Instructions: 1. Fry the onions. 2. Add peppers, tomatoes and spices until peppers look cooked. Keep stirring so it doesn’t stick. 3. Add beans and “extra” spices and mix well. 4. Keep them on low and remove from the heat once it has reached the consistency you like. I like this recipe because it’s simple and a good base, it’s even better the next day! Wait for it to cool and freeze in containers or ziplock bags to take up less space in your freezer. When you remove it, you can add whatever hot(?) spices you like or even cooked ground meat, mushrooms, zucchini, etc.
Pour it over the nachos! Add grated cheese! Everything you like! Bon appétit! ?
